30-Minute Sourdough Discard Cinnamon Rolls

Ingredients
  

Dough
  • 1 cup sourdough discard, unfed
  • 1/4 cup milk, warmed
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour plus more for dusting
Filling
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened
Frosting
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1-2 tablespoons milk

Method
 

  1. Whisk discard, milk, sugar, and salt.
  2. Add flour and knead until smooth.
  3. Roll into a 9x12 inch rectangle.
  4. Brush with melted butter, sprinkle with brown sugar and cinnamon.
  5. Roll into a log and seal.
  6. Cut into 12 slices and place in a greased pan.
  7. Cover and let rise for 15-20 minutes.
  8. Preheat oven to 375°F (190°C).
  9. Bake for 15-20 minutes, until golden brown.
  10. Beat cream cheese and butter until smooth.
  11. Add powdered sugar and milk, beat until smooth.
  12. Frost warm rolls and serve.

Notes

For a richer flavor, use brown butter in the filling.
