  • 3 pieces Bananas ripe or over-ripe
  • 1/4 cup Sweetener optional for children over 1
Starches and Flours
  • 1 1/2 cups Flour preferably starchy flour
  • 2 pieces Eggs
Fats
  • 1/4 cup Fats e.g., oil or melted butter
  • 1 teaspoon teaspoon Baking powder

Method
 

  1. Mash ripe bananas and mix with eggs and sweetener if using.
  2. Combine flour and baking powder, then add to wet ingredients.
  3. Mix until just combined; add fats and stir gently.
  4. Pour batter into a greased baking tin.
  5. Bake at 350°F (175°C) for 40 minutes or until a toothpick comes out clean.
  6. Let cool before slicing and serving. Optional: add chopped nuts on top.

Notes

Use ripe bananas for sweetness; omit sweetener for babies under 1 year old.
