  • 2 pieces very ripe bananas, mashed about 1 cup
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar or brown sugar
  • 0.25 cup melted unsalted butter
  • 1 large egg, at room temperature
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt

Method
 

  1. Mash bananas until smooth.
  2. Mix banana mash, melted butter, egg, and vanilla.
  3. Combine dry ingredients separately.
  4. Fold wet into dry until just combined.
  5. Scoop batter into muffin tin, ¾ full.
  6. Bake at 350°F for 20 minutes, cool before serving.
