  • 2 pieces ripe bananas the spottier, the better!
  • 1/3 cup melted butter or coconut oil for a dairy-free option
  • 1/2 cup sugar brown or white
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon optional, but highly recommended
  • 1 1/2 cups all-purpose flour
  • 1/4 cup yogurt or sour cream secret to keeping it moist!

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash bananas, then mix in melted butter, sugar, egg, and vanilla.
  3. Stir in baking soda, salt, cinnamon, then fold in flour. Add yogurt and mix until smooth.
  4. Pour batter into pan, sprinkle with extra sugar or cinnamon if desired, and bake for 50-60 minutes.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Let the bread cool completely before slicing for the best texture.
