Ingredients
  

Noodles
  • 200 grams rice noodles preferably rice vermicelli
Sauce
  • 3 tablespoons peanut butter smooth or chunky
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey
Vegetables
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
Garnish
  • 2 tablespoons chopped peanuts
  • 2 green onions sliced

Method
 

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, and honey to make the sauce.
  3. Combine cooked noodles, shredded carrots, and bell peppers in a large bowl, then toss with the sauce.
  4. Garnish with chopped peanuts and sliced green onions before serving.

Notes

Feel free to add protein like chicken or tofu for extra flavor.
