Bananas
  • 3 pieces ripe bananas
  • 1 cup gluten-free flour blend
  • 1/2 cup almond flour
  • 1/2 cup sugar or honey
  • 1/4 cup coconut oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash bananas, then mix in sugar, eggs, oil, and vanilla.
  3. Combine dry ingredients and fold into wet mixture.
  4. Stir in chocolate chips or nuts if desired, then pour into pan.
  5. Bake for 50-60 minutes, cool, then slice and serve.
